Ingredients

  • 4 boneless skinless chicken breasts
  • 8 white mushrooms, sliced
  • 10 pieces bacon, cut in chunks
  • 12 onion, diced
  • 1 cup low sodium chicken broth
  • 1 cup shredded mozzarella cheese or 1 cup edam cheese or 1 cup gouda cheese

Method

  • In a large fry pan, brown chicken on both sides.
  • Set into a roasting pan lined with foil.
  • In same fry pan cook bacon, mushrooms and onion until bacon is cooked.
  • Add broth and boil 3-4 minutes until thickened.
  • Pour over chicken in roasting pan, add shredded cheese and cover with foil.
  • Bake at 375F for 30 minutes (or until chicken is cooked).
  • You can substitute thighs for breasts if more servings are needed!
