Ingredients

  • 3/4 lb. chicken livers
  • salt and pepper to taste
  • flour
  • margarine enough to brown chicken liver in
  • 3 Tbsp. chopped onion
  • 1 c. uncooked rice
  • 2 cans chicken broth

Method

  • Sprinkle livers with salt and pepper; shake in small amount of flour in paper bag.
  • Brown in margarine in hot skillet.
  • Saute onion and rice in remaining butter in skillet until lightly browned.
  • Add chicken broth; stir well and pour in 9 x 13-inch casserole dish.
  • Place livers over top of rice.
  • Cover with tinfoil and bake at 400° for 30 minutes or until rice is tender and liquid is absorbed.
