Ingredients
- 3/4 lb. chicken livers
- salt and pepper to taste
- flour
- margarine enough to brown chicken liver in
- 3 Tbsp. chopped onion
- 1 c. uncooked rice
- 2 cans chicken broth
Method
- Sprinkle livers with salt and pepper; shake in small amount of flour in paper bag.
- Brown in margarine in hot skillet.
- Saute onion and rice in remaining butter in skillet until lightly browned.
- Add chicken broth; stir well and pour in 9 x 13-inch casserole dish.
- Place livers over top of rice.
- Cover with tinfoil and bake at 400° for 30 minutes or until rice is tender and liquid is absorbed.
