Ingredients

  • 1 c. chopped onion
  • 1 c. green pepper
  • 2 cloves garlic, minced
  • 2 Tbsp. salad oil
  • 1 c. cooked, diced ham
  • 12 small pork sausages
  • 1 c. cooked, diced chicken
  • 1 (No. 2) can tomatoes
  • 1 c. cooked rice
  • 1 1/2 c. chicken broth
  • 1/2 tsp. thyme
  • 1 tsp. salt
  • 1 Tbsp. chopped parsley

Method

  • Add onions, green pepper and garlic to hot oil in a skillet. Cook over low heat, stirring frequently until tender.
  • Stir in meat.
  • Cook for 5 minutes.
  • Add all remaining ingredients.
  • Place in a greased casserole dish.
  • Bake, covered, at 350° for 1 hour. Yields about 8 servings.
