- 1 (5 lb.) roasting chicken
- 3/4 c. diced celery
- 1 c. Mandarin orange sections, liquid removed
- 1/2 c. cultured lowfat sour cream
- 1 c. green grapes
- 1/2 c. mayonnaise
- 2 tbsp. finely chopped onion
- 1 tbsp. lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Cashew nuts
Method
- After chicken is cooked and cooled, remove skin.
- Cut chicken into fairly large bite size pcs.
- Place in a bowl and add in celery, grapes, orange sections.
- Mix together lowfat sour cream, mayonnaise, onion, lemon juice, salt and pepper.
- Pour over chicken and fruit and mix well.
- Cover and refrigerateseveral hrs to let flavors blend.
- I add in the nuts just before I serve it as I do not want them soggy.
- May substitute onion salt for chopped onion and do not always use pepper.
- Makes a great graduation salad.
