Ingredients

  • 1 (5 lb.) roasting chicken
  • 3/4 c. diced celery
  • 1 c. Mandarin orange sections, liquid removed
  • 1/2 c. cultured lowfat sour cream
  • 1 c. green grapes
  • 1/2 c. mayonnaise
  • 2 tbsp. finely chopped onion
  • 1 tbsp. lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Cashew nuts

Method

  • After chicken is cooked and cooled, remove skin.
  • Cut chicken into fairly large bite size pcs.
  • Place in a bowl and add in celery, grapes, orange sections.
  • Mix together lowfat sour cream, mayonnaise, onion, lemon juice, salt and pepper.
  • Pour over chicken and fruit and mix well.
  • Cover and refrigerateseveral hrs to let flavors blend.
  • I add in the nuts just before I serve it as I do not want them soggy.
  • May substitute onion salt for chopped onion and do not always use pepper.
  • Makes a great graduation salad.
