Ingredients

  • 2 c. Uncle Ben's rice
  • 4 c. water
  • salt to taste
  • 2 Tbsp. ketchup
  • black pepper
  • 1 tsp. hot sauce
  • 1 large onion
  • 3 blades green onion
  • 1 small pkg. chicken thighs
  • 2 small tomatoes, chopped small
  • small amount of water
  • 1 (16 oz.) bag mixed vegetables
  • soy sauce

Method

  • Cook rice in 4 cups of boiling water.
  • Add salt to taste; set aside to cool.
  • Clean chicken thighs and remove skin.
  • Place in pan.
  • Salt to taste.
  • Add onion and green onions, as well as tomatoes.
  • Sprinkle with black pepper and hot sauce.
  • Add water and cook until well done.
  • Remove bones.
  • Add cooked mixed vegetables to chopped chicken; mix well and add to cooked rice. Toss well together with soy sauce.
