Ingredients
- 2 egg whites
- 1 whole egg
- 2 Tbsp. sesame oil
- 3 green onions, chopped
- 1 1/3 c. cooked vegetables (peas, carrots, corn)
- 2 to 3 Tbsp. soy sauce
- 3 c. cooked white rice
Method
- In a bowl, beat together the egg whites and whole egg; let sit.
- Heat oil in large nonstick skillet over medium heat.
- Add vegetables and saute for 20 to 30 seconds.
- Add the eggs, saute for an additional 30 seconds. Add rice, chicken and soy sauce. Stir until well mixed.
