Ingredients

  • 1 chicken, cooked and cubed
  • 1/2 c. butter
  • 1/2 c. flour
  • 8 oz. can tomato sauce
  • water
  • chili powder
  • cayenne pepper
  • 1 pkg. tortillas
  • 1 c. grated cheese (Cheddar and American)

Method

  • Melt butter in saucepan
  • over
  • low heat.
  • Add flour and stir until smooth.
  • Add tomato sauce and stir.
  • Sauce should be thick, but not
  • stiff.
  • Add
  • water to desired consistency. Season with chili powder and cayenne pepper to taste.
  • Mix 1/4 cup sauce with chicken.
  • Fill
  • tortillas with chicken mixture. Roll up and place in rectangular casserole dish.
  • Pour remaining sauce over tortillas
  • and
  • sprinkle
  • with cheese.
  • Bake at 350° until cheese is melted and chicken is heated throughout.
