Ingredients

  • 2 tbsp. plus 2 teaspoon reduced calorie mayonnaise
  • 1 tbsp. pickle relish
  • 1 tbsp. lemon juice
  • 1/8 teaspoon freshly grnd black pepper
  • 4 (3 ounce.) skinless, boneless chicken breasts, pounded to flatten
  • 4 slices turkey bacon (30 calories per slice)
  • 12 slices reduced-calorie white bread, toasted
  • 2 c. lettuce leaves
  • 2 med. tomatoes, cut into 8 slices
  • Olives, pickles and carrots to garnish, (optional)

Method

  • Preheat broiler.
  • In small bowl, combine mayonnaise, relish, lemon juice and pepper; set aside.
  • Place chicken on broiler rack; broil 4 inches from heat 7 min.
  • Turn chicken over; place one bacon slice on top of each chicken breast.
  • Broil 2 to 3 min longer, till bacon is crisp and chicken is no longer pink.
  • Remove bacon from chicken; cold chicken and bacon slightly.
  • Spread mayonnaise mix proportionately on each slice of toast.
  • To assemble each sandwich, layer one slice of toast with a lettuce leaf, two slices tomato, 1 slice bacon, another slice of toast, lettuce, chicken, lettuce and a third slice of toast.
  • Cut in half diagonally and garnish with olives, pickles and carrots, if using.
  • Makes 4 servings.
