Ingredients

  • 1 lb boneless chicken
  • 12 cup unsalted peanuts
  • 2 tablespoons vegetable oil
  • 2 celery ribs, thickly sliced
  • 1 12 cups bean sprouts
  • 4 green onions, coarsely chopped
  • 1 (455 ml) jar sweet and sour sauce
  • 2 teaspoons soy sauce
  • cooked rice

Method

  • Cut chicken in 1-inch cubes.
  • In wok or skillet, toast peanuts over high heat, remove.
  • Add oil.
  • Stir fry chicken until no longer pink, 2-3 minutes.
  • Add celery, sprouts, and onions nad fry for 3 minutes.
  • Add sweet and sour sauce and soy sauce.
  • Heat through for 1 minute.
  • Serve on rice sprinkled with peanuts.
