Ingredients

  • 8 chicken breasts, cooked and diced
  • 1 c. mayo
  • 2 cans cream of mushroom soup
  • 2 1/2 c. rice, cooked
  • 1 c. celery, chopped
  • 1/2 c. chopped onion
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 stack saltine crackers, crumbled

Method

  • Combine soup and mayo. In separate bowl, combine rice, celery and onion.
  • Season rice mixture with salt and pepper.
  • In casserole dish, melt 1/4 stick of butter.
  • In bottom of dish, put small amount of mushroom sauce, rice, then chicken.
  • Continue layering process.
  • Pour remaining mushroom sauce on top. Sprinkle cracker crumbs on top. Bake for 45 minutes at 350° in preheated oven.
