Ingredients
- 8 chicken breasts, cooked and diced
- 1 c. mayo
- 2 cans cream of mushroom soup
- 2 1/2 c. rice, cooked
- 1 c. celery, chopped
- 1/2 c. chopped onion
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 stack saltine crackers, crumbled
Method
- Combine soup and mayo. In separate bowl, combine rice, celery and onion.
- Season rice mixture with salt and pepper.
- In casserole dish, melt 1/4 stick of butter.
- In bottom of dish, put small amount of mushroom sauce, rice, then chicken.
- Continue layering process.
- Pour remaining mushroom sauce on top. Sprinkle cracker crumbs on top. Bake for 45 minutes at 350° in preheated oven.
