Ingredients
- 2 lb. chicken breasts, cooked
- 1 stick margarine or butter
- 2 cans cream of chicken soup
- 1 can water or broth
- 3/4 c. raw rice
- 1/3 c. diced celery
- 1 tsp. instant onion or minced
- 4 oz. sliced mushrooms
- 2 tsp. cooking sherry
Method
- Debone and cut meat into bite-size pieces.
- Melt margarine in skillet.
- Add remaining ingredients, except chicken.
- Pour into oblong baking pan.
- Place pieces of chicken over entire top. Press down into liquid.
- Bake at 350° for 40 to 50 minutes or until rice is done.
