Ingredients

  • 2 lb. chicken breasts, cooked
  • 1 stick margarine or butter
  • 2 cans cream of chicken soup
  • 1 can water or broth
  • 3/4 c. raw rice
  • 1/3 c. diced celery
  • 1 tsp. instant onion or minced
  • 4 oz. sliced mushrooms
  • 2 tsp. cooking sherry

Method

  • Debone and cut meat into bite-size pieces.
  • Melt margarine in skillet.
  • Add remaining ingredients, except chicken.
  • Pour into oblong baking pan.
  • Place pieces of chicken over entire top. Press down into liquid.
  • Bake at 350° for 40 to 50 minutes or until rice is done.
