Ingredients

  • 1/2 c. Parmesan cheese
  • 1/2 c. minced fresh parsley
  • 1 c. crushed cracker crumbs or bread crumbs
  • 4 boneless, skinless chicken breasts
  • 1 stick butter
  • 1 small garlic clove, minced fine
  • 1 can chicken broth
  • 1 c. water
  • 1 c. raw rice

Method

  • Combine cheese, parsley and crumbs.
  • Set aside.
  • Salt and pepper chicken.
  • Melt butter in medium saucepan, adding garlic to flavor.
  • Dip each breast in butter and roll in crumbs.
  • In a lightly greased 9 x 13-inch baking pan, combine chicken broth, water and rice.
  • Place chicken on top.
  • Cover the pan with foil. Bake 1 hour at 350°.
  • Take foil off for the last 10 minutes so the top can brown.
