- 1/2 c. Parmesan cheese
- 1/2 c. minced fresh parsley
- 1 c. crushed cracker crumbs or bread crumbs
- 4 boneless, skinless chicken breasts
- 1 stick butter
- 1 small garlic clove, minced fine
- 1 can chicken broth
- 1 c. water
- 1 c. raw rice
Method
- Combine cheese, parsley and crumbs.
- Set aside.
- Salt and pepper chicken.
- Melt butter in medium saucepan, adding garlic to flavor.
- Dip each breast in butter and roll in crumbs.
- In a lightly greased 9 x 13-inch baking pan, combine chicken broth, water and rice.
- Place chicken on top.
- Cover the pan with foil. Bake 1 hour at 350°.
- Take foil off for the last 10 minutes so the top can brown.
