Ingredients

  • 2 to 3 lb. chicken, cooked or boiled
  • 3 c. water
  • 1 1/2 c. raw rice
  • 2 small onions, chopped
  • 2 stalks celery
  • dash of salt
  • 6 eggs, beaten
  • 2 c. milk
  • 3 c. celery, chopped
  • 1 tsp. dried onions
  • 1 tsp. parsley
  • dash of black pepper

Method

  • Place the chicken in water with rice, onions, celery and dash of salt.
  • Bring to boil, cover and simmer 45 minutes.
  • Remove chicken and let cool.
  • Strain the broth; remove the chicken from the bone.
  • Mix chicken, broth and remaining ingredients together. Place in casserole dish and bake at 350° for 45 minutes.
