Ingredients
- 2 to 3 lb. chicken, cooked or boiled
- 3 c. water
- 1 1/2 c. raw rice
- 2 small onions, chopped
- 2 stalks celery
- dash of salt
- 6 eggs, beaten
- 2 c. milk
- 3 c. celery, chopped
- 1 tsp. dried onions
- 1 tsp. parsley
- dash of black pepper
Method
- Place the chicken in water with rice, onions, celery and dash of salt.
- Bring to boil, cover and simmer 45 minutes.
- Remove chicken and let cool.
- Strain the broth; remove the chicken from the bone.
- Mix chicken, broth and remaining ingredients together. Place in casserole dish and bake at 350° for 45 minutes.
