Ingredients

  • 3 lb. chicken breast, cut in pieces
  • 3 Tbsp. olive oil
  • 1 c. chopped onions
  • 1 c. sliced mushrooms
  • 1 c. chopped bell pepper
  • 3 cloves minced garlic
  • 1 tsp. salt
  • 1 tsp. oregano
  • 1/2 tsp. celery seed
  • 1/4 tsp. pepper
  • 2 c. shredded Mozzarella cheese

Method

  • In large skillet, brown chicken pieces in hot oil.
  • Remove and drain on brown paper.
  • Saute onions, garlic, mushrooms and peppers in remaining oil until soft.
  • Add tomato sauce and spices.
  • Add chicken and simmer 30 minutes.
  • Boil spaghetti noodles, drain and put in casserole dish.
  • Pour sauce over noodles, top with cheese and melt under broiler if serving immediately.
  • Can be reheated.
