Ingredients

  • chicken breasts
  • 1 clove garlic
  • linguine
  • mushrooms
  • 2 tsp. oregano
  • pepper to taste
  • tomato paste
  • onion, minced
  • wine (preferably red)
  • salt to taste

Method

  • Coat frypan with Pam on low heat.
  • Fry 1 clove garlic, chopped up, just until brown.
  • Fry cut up chicken until cooked.
  • About halfway through cooking, add cut up onion and mushrooms.
  • Once these brown, pour wine over all.
  • Let boil a couple of seconds. Turn off; set aside.
  • In large pan, put in tomato paste mixed with water to desired thickness.
  • Add oregano, salt and pepper.
  • Mix chicken with wine and onion; stir.
  • Let simmer for 1 hour.
