Ingredients
- chicken breasts
- 1 clove garlic
- linguine
- mushrooms
- 2 tsp. oregano
- pepper to taste
- tomato paste
- onion, minced
- wine (preferably red)
- salt to taste
Method
- Coat frypan with Pam on low heat.
- Fry 1 clove garlic, chopped up, just until brown.
- Fry cut up chicken until cooked.
- About halfway through cooking, add cut up onion and mushrooms.
- Once these brown, pour wine over all.
- Let boil a couple of seconds. Turn off; set aside.
- In large pan, put in tomato paste mixed with water to desired thickness.
- Add oregano, salt and pepper.
- Mix chicken with wine and onion; stir.
- Let simmer for 1 hour.
