Ingredients

  • 3 boned, skinned chicken breasts, halved
  • 1 tsp. chopped green onion
  • 1 tsp. chopped parsley (can use dried)
  • 1 tsp. margarine (optional)
  • 1 egg, beaten
  • flour (for coating)
  • crushed corn flakes (for coating)

Method

  • Pound the chicken to 1/4-inch thickness.
  • Add all other ingredients.
  • Roll up and dredge through flour, 1 beaten egg and then crushed corn flakes.
  • Line in a shallow pan, seam side down. Let stand overnight or at least 1 hour in refrigerator.
  • When ready to bake, pour 1/2 cup melted butter and 1/2 cup dry white wine or chicken broth over meat, carefully not disturb the crumbs. Cover with aluminum foil and bake 1 hour at 350°.
  • Remove foil, baste with liquid and cook 1/2 hour longer.
  • Serves 4 to 6.
