Ingredients
- 3 boned, skinned chicken breasts, halved
- 1 tsp. chopped green onion
- 1 tsp. chopped parsley (can use dried)
- 1 tsp. margarine (optional)
- 1 egg, beaten
- flour (for coating)
- crushed corn flakes (for coating)
Method
- Pound the chicken to 1/4-inch thickness.
- Add all other ingredients.
- Roll up and dredge through flour, 1 beaten egg and then crushed corn flakes.
- Line in a shallow pan, seam side down. Let stand overnight or at least 1 hour in refrigerator.
- When ready to bake, pour 1/2 cup melted butter and 1/2 cup dry white wine or chicken broth over meat, carefully not disturb the crumbs. Cover with aluminum foil and bake 1 hour at 350°.
- Remove foil, baste with liquid and cook 1/2 hour longer.
- Serves 4 to 6.
