Ingredients

  • 1/2 c. fresh basil leaves, packed
  • 2 cloves garlic
  • 1 Tbsp. Dijon mustard
  • salt and pepper to taste
  • 2 Tbsp. grated orange rind
  • 3 Tbsp. orange juice
  • 2 tsp. olive oil
  • 3 whole, boneless chicken breasts

Method

  • Place basil, orange rind and garlic in blender or food processor.
  • Add orange juice, mustard, oil, salt and pepper. Process until paste is formed.
  • Marinate chicken in mixture overnight.
  • Spread mixture over chicken and grill or broil until done.
  • Also good with boneless pork chops.
