Ingredients

  • 6 chicken breasts, skinned and boned
  • 1/2 c. flour
  • 3 eggs, beaten
  • 3 Tbsp. water
  • 1/2 c. grated Romano cheese
  • 1/2 c. chopped parsley
  • 1/2 tsp. salt
  • 1 c. seasoned bread crumbs
  • 3 Tbsp. butter
  • 2 Tbsp. vegetable oil
  • 6 slices Mozzarella cheese

Method

  • Coat chicken breasts with flour.
  • Set aside.
  • Combine egg, water, Romano cheese, parsley and salt.
  • Mix well.
  • Dip flour coated chicken into egg mixture.
  • Roll chicken breasts in seasoned bread crumbs.
  • Heat butter and oil in large skillet and fry chicken until golden brown.
  • Cook slowly 10 to 15 minutes.
  • Remove to baking dish.
  • When ready to bake, top each piece of chicken with a piece of Mozzarella cheese.
  • Pour cheese sauce over chicken and bake, uncovered, at 425° for 10 to 15 minutes.
  • Serve immediately. Can be done a day ahead, but don't put cheese on.
