- 6 chicken breasts, skinned and boned
- 1/2 c. flour
- 3 eggs, beaten
- 3 Tbsp. water
- 1/2 c. grated Romano cheese
- 1/2 c. chopped parsley
- 1/2 tsp. salt
- 1 c. seasoned bread crumbs
- 3 Tbsp. butter
- 2 Tbsp. vegetable oil
- 6 slices Mozzarella cheese
Method
- Coat chicken breasts with flour.
- Set aside.
- Combine egg, water, Romano cheese, parsley and salt.
- Mix well.
- Dip flour coated chicken into egg mixture.
- Roll chicken breasts in seasoned bread crumbs.
- Heat butter and oil in large skillet and fry chicken until golden brown.
- Cook slowly 10 to 15 minutes.
- Remove to baking dish.
- When ready to bake, top each piece of chicken with a piece of Mozzarella cheese.
- Pour cheese sauce over chicken and bake, uncovered, at 425° for 10 to 15 minutes.
- Serve immediately. Can be done a day ahead, but don't put cheese on.
