- 1 whole chicken, boiled and deboned
- 1 lb. smoked pork sausage
- 1 stick butter
- 1 tsp. Cavender's greek seasoning
- 1 tsp. salt
- 1 tsp. pepper
- 1/4 tsp. red pepper
- 3 bay leaves
- 1 tsp. thyme
- 1 can diced tomatoes
- 2 Tbsp. worcestershire sauce
- 3 large onions, chopped
- minced garlic, equivalent to 4 cloves
- 3 c. uncooked rice, white or brown
Method
- In large pot, melt butter and saute onions until translucent. Add all seasonings, including worcestershire sauce.
- Cook another 2 minutes.
- Add sausage, chicken, rice, and diced tomatoes with 4 cups of water.
- Stir well.
- Cover and cook until rice is done. Rice will soak up most of liquid.
- If appears to be getting too dry before rice is done, just add more water.
