Ingredients

  • 1 whole chicken, boiled and deboned
  • 1 lb. smoked pork sausage
  • 1 stick butter
  • 1 tsp. Cavender's greek seasoning
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1/4 tsp. red pepper
  • 3 bay leaves
  • 1 tsp. thyme
  • 1 can diced tomatoes
  • 2 Tbsp. worcestershire sauce
  • 3 large onions, chopped
  • minced garlic, equivalent to 4 cloves
  • 3 c. uncooked rice, white or brown

Method

  • In large pot, melt butter and saute onions until translucent. Add all seasonings, including worcestershire sauce.
  • Cook another 2 minutes.
  • Add sausage, chicken, rice, and diced tomatoes with 4 cups of water.
  • Stir well.
  • Cover and cook until rice is done. Rice will soak up most of liquid.
  • If appears to be getting too dry before rice is done, just add more water.
