Ingredients

  • 1 uncooked fryer, cut for frying
  • 1 1/2 sticks butter or oleo
  • 2 envelopes onion soup mix
  • 2 c. rice, uncooked
  • 8 c. water

Method

  • Melt oleo in 4-quart baking dish.
  • Add onion soup mix and mix well.
  • Place chicken in a layer on top of mixture.
  • Sprinkle the rice on top of this.
  • Add the water.
  • Cover and bake at 350° for 1 hour.
  • Remove cover and brown.
  • If you do not have a 4-quart casserole dish, you can halve this recipe and bake it in two 2-quart casseroles.
  • Serves 10 to 12.
