- 400g skinless chicken breast fillets
- spray olive oil
- 40g rocket leaves
- 1 small Lebanese cucumber, thinly sliced
- 1 ripe avocado, peeled, thinly sliced
- 1 red onion, sliced
- 4 multigrain/wholemeal bread rolls, cut in half
- 1/4 cup KRAFT FREE Mayonnaise
- 1 tablespoon reduced fat milk
- 1/4 teaspoon finely grated lemon rind Safeway 4 ct For $5.00 thru 02/09
- black pepper, to taste
Method
- Cook chicken breasts on a lightly oiled, pre-heated grill plate for 4-5 minutes each side until cooked through.
- Slice thinly.
- Arrange rocket, cucumber, avocado, onion, and chicken onto the base of each roll.
- Mix together the mayonnaise, milk, lemon rind and pepper.
- Spoon over the chicken and replace roll top.
