Ingredients

  • 1 quart chicken broth
  • 1 cup water
  • 12 ounces chicken breasts, cubed
  • 1 cup chopped onion
  • 13 cup coarsely chopped carrot
  • 13 cup coarsely chopped celery
  • 1 garlic clove, minced
  • 14 cup chopped parsley
  • 12 teaspoon dried thyme
  • 1 bay leaf
  • 13 cup quick-cooking barley
  • salt and pepper

Method

  • Combine all ingredients except barley, salt and pepper in slow cooker; cover and cook on high for 4-6 hours, adding barley during the last 30 minutes.
  • Discard bay leaf; season to taste with salt and pepper.
