Ingredients
- 1 quart chicken broth
- 1 cup water
- 12 ounces chicken breasts, cubed
- 1 cup chopped onion
- 13 cup coarsely chopped carrot
- 13 cup coarsely chopped celery
- 1 garlic clove, minced
- 14 cup chopped parsley
- 12 teaspoon dried thyme
- 1 bay leaf
- 13 cup quick-cooking barley
- salt and pepper
Method
- Combine all ingredients except barley, salt and pepper in slow cooker; cover and cook on high for 4-6 hours, adding barley during the last 30 minutes.
- Discard bay leaf; season to taste with salt and pepper.
