Ingredients

  • 2 pints cherry tomatoes
  • 1 Hass avocado
  • 1 tablespoon lemon juice
  • 3 sliced bacon, cooked crisp and chopped
  • 34 cup cooked quinoa
  • 13 cup finely chopped green onion
  • 2 tablespoons crumbled blue cheese
  • salt and pepper

Method

  • Slice the tops off the cherry tomatoes and scoop out pulp.
  • Place cut side down on paper towels and let drain 15 minutes.
  • Meanwhile, mash avocado and lemon juice.
  • Stir in quinoa, green onions and cheese.
  • Season to taste with salt and pepper.
  • Spoon quinoa mixture into tomato shells.
  • Refrigerate 1 hour before serving.
