Ingredients
- 1 1/4 c. flour
- 1/2 c. sugar
- 1/2 c. margarine
- 2 eggs
- 1/2 c. brown sugar, packed firm
- 1 tsp. vanilla
- 1/8 tsp. baking soda
- 1 c. walnuts, chopped
- 1 c. raisins
- 1 c. coconut (optional)
Method
- Preheat oven to 350°.
- Lightly grease an 8-inch square pan. Combine flour and sugar, cut in margarine until mixture resembles fine meal.
- Press into greased pan and bake 20 minutes or until edges are golden brown.
- Meanwhile, mix eggs, brown sugar and vanilla beating well.
- Stir in soda, walnuts, raisins and coconut. Spoon over hot crust, spread evenly.
- Return to oven; bake an additional 20 to 25 minutes or until top is set.
- Cool, cut into bars and serve.
