Ingredients

  • 1 1/4 c. flour
  • 1/2 c. sugar
  • 1/2 c. margarine
  • 2 eggs
  • 1/2 c. brown sugar, packed firm
  • 1 tsp. vanilla
  • 1/8 tsp. baking soda
  • 1 c. walnuts, chopped
  • 1 c. raisins
  • 1 c. coconut (optional)

Method

  • Preheat oven to 350°.
  • Lightly grease an 8-inch square pan. Combine flour and sugar, cut in margarine until mixture resembles fine meal.
  • Press into greased pan and bake 20 minutes or until edges are golden brown.
  • Meanwhile, mix eggs, brown sugar and vanilla beating well.
  • Stir in soda, walnuts, raisins and coconut. Spoon over hot crust, spread evenly.
  • Return to oven; bake an additional 20 to 25 minutes or until top is set.
  • Cool, cut into bars and serve.
