Ingredients

  • 2 c. unbleached all-purpose flour
  • 3 tsp. baking soda
  • 1/2 tsp. salt
  • 5 Tbsp. white sugar
  • 1 egg, beaten
  • 1 c. milk
  • 3 Tbsp. unsalted butter, melted
  • 3/4 c. fresh cherries, chopped

Method

  • Preheat oven to 425°.
  • Sift dry ingredients together, except for 2 tablespoons sugar.
  • Mix together the egg, milk and melted butter.
  • Sprinkle the chopped cherries with the reserved 2 tablespoons of sugar and mix.
  • Add cherries to the dry ingredients to the wet and combine quickly.
  • Do not overmix.
  • Lumps are okay. Immediately turn batter into greased muffin tins, filling each cup 2/3 full.
  • Bake for 20 to 30 minutes.
  • Cool muffins on a rack before serving.
