Ingredients
- 2 c. unbleached all-purpose flour
- 3 tsp. baking soda
- 1/2 tsp. salt
- 5 Tbsp. white sugar
- 1 egg, beaten
- 1 c. milk
- 3 Tbsp. unsalted butter, melted
- 3/4 c. fresh cherries, chopped
Method
- Preheat oven to 425°.
- Sift dry ingredients together, except for 2 tablespoons sugar.
- Mix together the egg, milk and melted butter.
- Sprinkle the chopped cherries with the reserved 2 tablespoons of sugar and mix.
- Add cherries to the dry ingredients to the wet and combine quickly.
- Do not overmix.
- Lumps are okay. Immediately turn batter into greased muffin tins, filling each cup 2/3 full.
- Bake for 20 to 30 minutes.
- Cool muffins on a rack before serving.
