Ingredients
- 1 1/2 c. all-purpose flour
- 1 1/2 c. sugar
- 1 tsp. baking powder
- 1 tsp. salt
- 2 pkg. (7 1/4 oz. each) pitted dates
- 1 lb. dried, candied pineapple
- 2 jars (16 oz. each) cherries, drained
- 18 oz. (5 1/2 c.) pecan halves
- 6 eggs
- 1/3 c. dark rum
- 1/2 c. light corn syrup
Method
- Grease pan (tube or two 9 x 5 x 3-inch loaf pans).
- Add flour, baking powder and salt into bowl and mix.
- Add fruit and mix, then beat eggs and rum together and pour over fruit.
- Mix well and bake at 300° for 1 hour and 45 minutes.
- Brush with glaze.
