Ingredients

  • 1 1/2 c. all-purpose flour
  • 1 1/2 c. sugar
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 2 pkg. (7 1/4 oz. each) pitted dates
  • 1 lb. dried, candied pineapple
  • 2 jars (16 oz. each) cherries, drained
  • 18 oz. (5 1/2 c.) pecan halves
  • 6 eggs
  • 1/3 c. dark rum
  • 1/2 c. light corn syrup

Method

  • Grease pan (tube or two 9 x 5 x 3-inch loaf pans).
  • Add flour, baking powder and salt into bowl and mix.
  • Add fruit and mix, then beat eggs and rum together and pour over fruit.
  • Mix well and bake at 300° for 1 hour and 45 minutes.
  • Brush with glaze.
