Ingredients
- 1 cup mayonnaise
- 1 tsp fresh lemon juice
- 1 cup chopped celery
- 1/4 cup sliced almonds
- 3/4 cup dried cherries
- 1 store bought rotisserie chicken, or 3 cups cubed chicken
- 1 lettuce
Method
- Pull off and discard the skin from the chicken.
- Remove all the meat from the bones, and cut it into cubes.
- Place the chicken cubes into a large mixing bowl.
- Add the remaining ingredients, and toss together until thoroughly mixed.
- Refrigerate for at least 2 hours, and serve chilled over lettuce leaf cups.
- *You can also substitute dried cranberries or chopped Granny Smith apples in place of the dried cherries.
