Ingredients

  • 1 cup mayonnaise
  • 1 tsp fresh lemon juice
  • 1 cup chopped celery
  • 1/4 cup sliced almonds
  • 3/4 cup dried cherries
  • 1 store bought rotisserie chicken, or 3 cups cubed chicken
  • 1 lettuce

Method

  • Pull off and discard the skin from the chicken.
  • Remove all the meat from the bones, and cut it into cubes.
  • Place the chicken cubes into a large mixing bowl.
  • Add the remaining ingredients, and toss together until thoroughly mixed.
  • Refrigerate for at least 2 hours, and serve chilled over lettuce leaf cups.
  • *You can also substitute dried cranberries or chopped Granny Smith apples in place of the dried cherries.
