Ingredients
- 8 oz. grated Cheddar cheese
- 1/4 c. butter
- 1/4 c. flour
- 2 c. milk
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/2 c. chopped onion
- 5 medium potatoes, peeled, if desired, and sliced thin
- 1/4 c. cooked, crumbled bacon (if desired)
Method
- In a saucepan over medium heat, melt butter; blend in flour and add milk, all at once.
- Stir until thickened.
- Add grated cheese, salt and pepper.
- Continue to cook and stir until cheese is melted.
- Remove from heat and spread 1/2 of the cheese sauce on the bottom of a shallow 2 1/2-quart casserole dish.
- Place potatoes on top of cheese sauce, sprinkle with onions and bacon. Add remaining sauce over potatoes.
- Bake at 350° for 1 hour, until potatoes are tender.
