Ingredients

  • 8 oz. grated Cheddar cheese
  • 1/4 c. butter
  • 1/4 c. flour
  • 2 c. milk
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 c. chopped onion
  • 5 medium potatoes, peeled, if desired, and sliced thin
  • 1/4 c. cooked, crumbled bacon (if desired)

Method

  • In a saucepan over medium heat, melt butter; blend in flour and add milk, all at once.
  • Stir until thickened.
  • Add grated cheese, salt and pepper.
  • Continue to cook and stir until cheese is melted.
  • Remove from heat and spread 1/2 of the cheese sauce on the bottom of a shallow 2 1/2-quart casserole dish.
  • Place potatoes on top of cheese sauce, sprinkle with onions and bacon. Add remaining sauce over potatoes.
  • Bake at 350° for 1 hour, until potatoes are tender.
