Ingredients

  • 2 Tbsp. butter
  • 1 large onion, chopped
  • 1/4 c. all-purpose flour
  • 3 1/2 c. milk
  • 1 lb. scallops
  • 1 (4 oz.) can sliced mushrooms
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 c. dry white wine
  • 2/3 c. shredded Swiss cheese
  • 2 Tbsp. parsley, snipped

Method

  • Melt butter and cook onion until tender, covered.
  • Stir in flour and add milk, cooking until it bubbles.
  • Add scallops, mushrooms, salt and pepper, simmering, 15 to 20 minutes.
  • Add wine and cheese; stir until cheese melts.
  • Top with parsley and serve. Very easy and tasty on a cold day.
