Ingredients
- 2 Tbsp. butter
- 1 large onion, chopped
- 1/4 c. all-purpose flour
- 3 1/2 c. milk
- 1 lb. scallops
- 1 (4 oz.) can sliced mushrooms
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 c. dry white wine
- 2/3 c. shredded Swiss cheese
- 2 Tbsp. parsley, snipped
Method
- Melt butter and cook onion until tender, covered.
- Stir in flour and add milk, cooking until it bubbles.
- Add scallops, mushrooms, salt and pepper, simmering, 15 to 20 minutes.
- Add wine and cheese; stir until cheese melts.
- Top with parsley and serve. Very easy and tasty on a cold day.
