Ingredients

  • 3 large potatoes
  • 1 large onion
  • 3 Tbsp. butter
  • 1 c. hot tap water
  • 1 tsp. minced parsley
  • 2 tsp. instant chicken bouillon
  • 1/4 c. shredded sharp cheese

Method

  • If potatoes are nice, no need to peel.
  • Slice potatoes and onions and layer in casserole.
  • Sprinkle with a little salt, if desired.
  • Dot top with butter.
  • Mix hot water with bouillon and pour over top.
  • Cover and microwave on High for 17 to 20 minutes, until potatoes are tender, stirring occasionally.
  • Uncover, sprinkle with cheese and parsley.
  • Recover, microwave 1 to 2 minutes longer.
