Ingredients

  • 6 skinless, boneless chicken breast halves (about 5 oz. each)
  • 1/3 c. Dijon mustard
  • 1/4 c. white wine
  • 2 c. fresh bread crumbs
  • 1 c. Romano cheese, grated

Method

  • Heat oven to 500°.
  • Pound chicken breasts to flatten.
  • Combine mustard and wine in shallow dish; stir to blend.
  • In another shallow dish, combine bread crumbs and cheese.
  • Toss to mix. Lightly coat a baking sheet with nonstick vegetable spray.
  • Dip chicken into the mustard mixture, turning to coat both sides. Dredge chicken in crumbs to coat well.
  • Place on baking sheet. Coat all chicken breasts.
  • Bake 8 minutes.
  • If crumbs aren't brown enough, place under broiler for 10 minutes.
  • Serves 6.
