Ingredients
- 6 skinless, boneless chicken breast halves (about 5 oz. each)
- 1/3 c. Dijon mustard
- 1/4 c. white wine
- 2 c. fresh bread crumbs
- 1 c. Romano cheese, grated
Method
- Heat oven to 500°.
- Pound chicken breasts to flatten.
- Combine mustard and wine in shallow dish; stir to blend.
- In another shallow dish, combine bread crumbs and cheese.
- Toss to mix. Lightly coat a baking sheet with nonstick vegetable spray.
- Dip chicken into the mustard mixture, turning to coat both sides. Dredge chicken in crumbs to coat well.
- Place on baking sheet. Coat all chicken breasts.
- Bake 8 minutes.
- If crumbs aren't brown enough, place under broiler for 10 minutes.
- Serves 6.
