Ingredients

  • 1/2 medium Green pepper
  • 1/2 medium Onion
  • 1/2 cup Parmesan cheese
  • 2 cup Rice
  • 3 Eggs
  • 1 cup Italian bread crumbs
  • 1 1/2 cup Mozz cheese
  • 1 Vegtable Oil

Method

  • Cook Rice fully as directed on box
  • When rice is cooked mix one egg, the parmesan cheese, mozz cheese, the chopped peppers and onions in with rice
  • Let cool
  • Fill pan with vegtable oil about four inches deep and heat
  • When rice has cooled, make the rice into balls
  • Whisk the last two eggs in seperate bowl.
  • Then put bread crumbs in another seperate bowl
  • Dip rice ball in the eggs, then dip it in the bread crumbs, then put in vegtable oil
  • Repeate till all the balls are in the vegtable oil.. Should make about eight balls.
  • Keep balls in vegtable oil untill they turn brown.
  • I like to keep mine in longer to get a crunchier outside.
  • Take out the balls let them cool and enjoy!
  • You can also eat these with marinara sauce which is really good!
