Ingredients
- 2 1/2 lb. cream cheese, softened
- 1 3/4 c. sugar
- 5 whole eggs
- 2 egg yolks
- 3 Tbsp. flour
- 1/4 c. heavy cream
- 1/2 tsp. vanilla
- 1 1/2 tsp. mixed grated lemon and orange rind
Method
- Beat
- cream cheese and sugar with electric mixer.
- Add 5 eggs and
- 2 egg yolks 1 at a time, beating after each addition. Add flour,
- followed
- by
- heavy cream.
- Add vanilla and grated rind. Mix
- until
- smooth,
- creamy consistency.
- Pour into a heavy aluminum
- spring-form
- pan.
- Bake
- in a 500° oven for 12 minutes. Reduce
- heat
- to 250° and bake for 1 hour.
- Yields 16 servings.
