Ingredients

  • 2 1/2 lb. cream cheese, softened
  • 1 3/4 c. sugar
  • 5 whole eggs
  • 2 egg yolks
  • 3 Tbsp. flour
  • 1/4 c. heavy cream
  • 1/2 tsp. vanilla
  • 1 1/2 tsp. mixed grated lemon and orange rind

Method

  • Beat
  • cream cheese and sugar with electric mixer.
  • Add 5 eggs and
  • 2 egg yolks 1 at a time, beating after each addition. Add flour,
  • followed
  • by
  • heavy cream.
  • Add vanilla and grated rind. Mix
  • until
  • smooth,
  • creamy consistency.
  • Pour into a heavy aluminum
  • spring-form
  • pan.
  • Bake
  • in a 500° oven for 12 minutes. Reduce
  • heat
  • to 250° and bake for 1 hour.
  • Yields 16 servings.
