Ingredients

  • 1 tablespoon zesty Italian dressing
  • 2 tablespoons onions, chopped
  • 34 cup instant rice, uncooked
  • 34 cup chicken broth, 25% less sodium
  • 1 plum tomato, chopped
  • 2 tablespoons philadelphia cream cheese spread
  • 2 tablespoons parmesan cheese, shredded
  • 1 tablespoon fresh parsley, chopped

Method

  • Heat dressing in small saucepan on medium heat.
  • Add onions; cook and stir 3 minutes or until tender.
  • Stir in rice, broth and tomatoes.
  • Bring to a boil.
  • Reduce heat to low; simmer for 3 minutes.
  • Add cheese and parsley; stir until blended.
  • Remove from heat.
  • Let stand, covered for 5 minutes before serving.
