- 1 tablespoon zesty Italian dressing
- 2 tablespoons onions, chopped
- 34 cup instant rice, uncooked
- 34 cup chicken broth, 25% less sodium
- 1 plum tomato, chopped
- 2 tablespoons philadelphia cream cheese spread
- 2 tablespoons parmesan cheese, shredded
- 1 tablespoon fresh parsley, chopped
Method
- Heat dressing in small saucepan on medium heat.
- Add onions; cook and stir 3 minutes or until tender.
- Stir in rice, broth and tomatoes.
- Bring to a boil.
- Reduce heat to low; simmer for 3 minutes.
- Add cheese and parsley; stir until blended.
- Remove from heat.
- Let stand, covered for 5 minutes before serving.
