Ingredients
- 2 lb. yellow crookneck squash
- 2 c. shredded Cheddar cheese
- 8 slices bacon, crisp cooked, drained and crumbled
- 1 c. crushed herb-seasoned croutons
- 1/2 c. melted butter
Method
- Scrub squash and cut off ends (do not peel).
- Slice to make 6 cups.
- Cook, covered, in a small pot of boiling water until tender, 15 to 20 minutes.
- Drain well and sprinkle with salt and pepper.
- In a 9 x 12 x 2-inch baking dish, layer the squash, Cheddar cheese, bacon and croutons.
- Drizzle with melted butter. Bake, uncovered, at 350° for 20 minutes or until cheese melts and croutons are golden brown.
