Ingredients

  • 2 c. raw, long grain rice
  • 6 c. boiling water
  • 3 tsp. salt
  • 6 slices lean bacon
  • 2 medium onions, chopped fine
  • 1 (8 oz.) can tomato sauce
  • 1 (6 oz.) can tomato paste
  • 3 tsp. sugar
  • 2 tsp. Worcestershire sauce
  • dash of red hot pepper sauce

Method

  • Cook rice in 6 cups salted water until light and fluffy, not soft and sticky.
  • Fry bacon until brown and crisp.
  • Saute onions in 4 tablespoons of bacon fat until clear.
  • Add tomato sauce and paste, sugar, Worcestershire sauce and hot sauce and cook slowly for 10 minutes.
  • Place the cooked rice in a buttered baking dish and stir all seasonings in rice.
  • Place in oven and bake at 325° for 45 minutes.
  • Crumble bacon over top.
  • Makes 10 to 12 servings.
