Ingredients

  • 2 c. flour
  • 4 tsp. baking powder
  • 1 tsp. salt
  • 1/4 c. butter
  • about 2/3 c. milk
  • ripe tomatoes, peeled and sliced
  • 1 1/2 c. grated sharp Cheddar
  • 1/3 c. mayonnaise
  • 2 Tbsp. torn basil leaves
  • 1 Tbsp. chopped chives

Method

  • Preheat oven to 400°.
  • To make biscuit dough, place flour, salt and baking powder in bowl and cut in butter until mixture becomes coarse.
  • Add enough milk to make dough medium soft.
  • Place about half of dough onto floured board and roll to fit 9-inch pie pan. Cover dough with tomato slices; sprinkle chives and basil over tomatoes.
  • Top with half of the cheese and coat with mayonnaise. Add remaining cheese.
  • Roll remaining dough thinly to fit over top of the pie and pinch cloves.
  • Bake until brown on top, about 20 minutes.
  • Makes six servings.
