- 1/4 c. chopped onion
- 1/2 c. chopped celery (fine)
- 2 Tbsp. butter
- 1 c. cream of mushroom soup
- 1 c. chicken stock
- 2 Tbsp. cornstarch
- 2 Tbsp. lemon juice
- 1 Tbsp. soy sauce
- 2 c. diced chicken
- 1/2 c. toasted, sliced almonds
- 1 tsp. salt
- 1 tsp. pepper
Method
- Cook onions and celery until tender.
- Stir in soup and chicken stock; heat to boiling.
- Combine cornstarch, lemon juice and soy sauce.
- Mix until smooth.
- Add to soup mixture.
- Cook until thick; add chicken and toasted almonds.
- Salt and pepper.
- Pour chicken chow mein over chow mein noodles.
