Ingredients

  • 1/4 c. chopped onion
  • 1/2 c. chopped celery (fine)
  • 2 Tbsp. butter
  • 1 c. cream of mushroom soup
  • 1 c. chicken stock
  • 2 Tbsp. cornstarch
  • 2 Tbsp. lemon juice
  • 1 Tbsp. soy sauce
  • 2 c. diced chicken
  • 1/2 c. toasted, sliced almonds
  • 1 tsp. salt
  • 1 tsp. pepper

Method

  • Cook onions and celery until tender.
  • Stir in soup and chicken stock; heat to boiling.
  • Combine cornstarch, lemon juice and soy sauce.
  • Mix until smooth.
  • Add to soup mixture.
  • Cook until thick; add chicken and toasted almonds.
  • Salt and pepper.
  • Pour chicken chow mein over chow mein noodles.
