Ingredients

  • 1 pound celery root celerilac peeled and shredded, about 4 cups
  • 3 celery stalks thinly sliced
  • 6 tablespoons fresh lemon juice
  • 1 cup mayonnaise
  • 1 cup yogurt
  • 1 meter low-fat sour cream
  • 1 tablespoon capers minced
  • 2 tablespoons cornichons minced
  • 2 tablespoons dijon mustard
  • 1 teaspoon sugar
  • 2 tablespoons fresh parsley mind
  • 1 teaspoon celery seed
  • 1 salt and freshly ground peppy to taste
  • 3 tablespoons celery leaves chopped

Method

  • In a large bowl combine celery root and celery and toss with lemon juice.
  • Let marinate for 1 hour.
  • In a small howl combine mayonnaise and yogurt or sour cream.
  • Add capers canichons mustard sugar parsley and celery seed.
  • Toss with celery mixture.
  • Add salt and pepper.
  • Garnish with celery leaves.
