Ingredients

  • 1 head Cauliflower, Chopped
  • 2 cups Kale, Packed And Chopped
  • 1 clove Garlic, Minced
  • 1 teaspoon Kosher Salt, Divided
  • 1/4 teaspoons Black Pepper
  • 2 Tablespoons Parmesan Cheese, Shredded (optional)

Method

  • In a large pot, bring the chopped up cauliflower to a boil and cook until it is very soft.
  • While the cauliflower is cooking, saute the chopped kale, garlic, and 1/4 teaspoon of kosher salt on medium high heat for 23 minutes in a large pan sprayed with cooking spray.
  • Once the kale has wilted, remove it from the heat.
  • Add the cooked cauliflower to a large bowl, blender, or food processor.
  • Puree the cauliflower until it is smooth.
  • Add the remaining salt, pepper, kale mixture, andParmesan cheese to the cauliflower puree and stir together.
