Ingredients

  • 20 large carrots
  • 1 1/2 pt. whipping cream
  • 1 1/2 c. grated Parmesan cheese
  • 20 pecans (optional)
  • 1 large grated onion
  • Lawry's seasoning salt
  • pepper to taste

Method

  • Boil carrots that have been cut crosswise in salted water for 15 to 20 minutes or until tender.
  • Drain and put in blender or grate.
  • Stir in cream, cheese, onion and seasonings.
  • Pour into a large buttered casserole.
  • Place pecan halves over top.
  • Bake at 350° for 45 minutes to 1 hour.
  • Freezes well.
  • A wonderful companion with turkey.
  • Serves 12 to 14.
