Ingredients
- 2 (8 oz.) pkg. cream cheese
- 4 small carrots, grated finely
- 1/2 c. chopped pecans
- 1 Tbsp. onion juice
- salt and pepper to taste
- mayonnaise
- brown bread
Method
- In mixer, cream the cheese and add grated carrots, onion juice, salt, pepper and enough mayonnaise to moisten.
- Add pecans. Trim bread.
- Spread filling and roll like jelly roll.
- (We rolled our bread prior to spreading filling.) Chill or freeze before slicing into 1/2-inch slices.
- Freezes well.
