Ingredients
- 4 cups finely grated carrots
- 12 cup fresh lemon juice
- 12 cup chopped parsley
- 14 cup currants
- 14 cup blanched slivered almond, toasted
- 2 teaspoons ground cumin
- 12 butter lettuce leaves
Method
- Combine all ingredients except lettuce in small bowl.
- Wash and gently dry lettuce leaves; remove hard core ends.
- Spoon 1/3 to 1/2 cup carrot mixture across center of each lettuce leaf.
- Tuck in ends and roll tightly.
- Enjoy!
