Ingredients
- 1 c. Crisco
- 1/2 c. brown sugar
- 1 c. carrot, grated
- pinch of salt
- 1 tsp. lemon juice
- 1/2 tsp. baking soda, mixed with 1 tsp. water
- 1 1/4 c. flour
- 1 egg, divided
- 1 tsp. baking powder
Method
- Cream Crisco, sugar and egg yolk.
- Add carrot, salt and lemon juice.
- Add baking soda with water, then flour with baking powder. Mix well and add beaten egg white.
- Pour into greased 6 cup mold (a Bundt cake pan).
- Bake at 350° for 45 minutes.
- Serve hot; can be frozen, unbaked.
- Serves 6; can be doubled.
