Ingredients

  • 1 c. Crisco
  • 1/2 c. brown sugar
  • 1 c. carrot, grated
  • pinch of salt
  • 1 tsp. lemon juice
  • 1/2 tsp. baking soda, mixed with 1 tsp. water
  • 1 1/4 c. flour
  • 1 egg, divided
  • 1 tsp. baking powder

Method

  • Cream Crisco, sugar and egg yolk.
  • Add carrot, salt and lemon juice.
  • Add baking soda with water, then flour with baking powder. Mix well and add beaten egg white.
  • Pour into greased 6 cup mold (a Bundt cake pan).
  • Bake at 350° for 45 minutes.
  • Serve hot; can be frozen, unbaked.
  • Serves 6; can be doubled.
