Ingredients

  • 1 c. oil
  • 2 c. sugar
  • 3 eggs, beaten
  • 2 1/2 c. flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 2 tsp. vanilla
  • 2 c. grated carrots
  • 1 c. chopped pecans
  • 1 c. crushed pineapple, drained

Method

  • Combine oil and sugar, mixing well.
  • Add eggs.
  • Sift dry ingredients together and add, mixing well.
  • Add remaining ingredients and pour into 2 greased and floured loaf pans.
  • Bake at 350° for 1 hour.
  • I use four 7 x 3 1/2-inch pans and bake 40 to 45 minutes, or until a toothpick comes out clean.
