Ingredients
- 2 egg yolks (save whites for meringue)
- 2/3 c. sugar
- 1 tsp. cinnamon
- 1 Tbsp. flour
- 1 Tbsp. butter
- 1 c. raw carrots, grated
- 1/2 c. sweet milk
- 1 (9-inch) pie shell
Method
- Mix all ingredients together.
- Pour into crust.
- Bake at 425° for 15 to 20 minutes, then turn temperature to 350° and bake until it isn't sticky when touched with your finger (about 30 minutes). When cool, put meringue on top and brown.
