Ingredients

  • 1/2 medium size lemon
  • 3 extra large eggs
  • 1 c. vegetable oil
  • 1 3/4 c. granulated sugar
  • 2 c. shredded carrots
  • 3 c. all-purpose flour
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 1 tsp. baking soda

Method

  • Grind lemon (peel and pulp) with meat chopper or blender. Beat eggs in mixing bowl.
  • Add oil and sugar. Mix well.
  • Add carrots and lemon and blend.
  • Sift together dry ingredients.
  • Add to liquid ingredients and lightly blend.
  • P our into 2 greased loaf pans and bake at 350° for 45 to 50 minutes or until a cake tester inserted into the center comes out clean.
