Ingredients
- 1/2 medium size lemon
- 3 extra large eggs
- 1 c. vegetable oil
- 1 3/4 c. granulated sugar
- 2 c. shredded carrots
- 3 c. all-purpose flour
- 1 tsp. salt
- 1/2 tsp. baking powder
- 1 tsp. baking soda
Method
- Grind lemon (peel and pulp) with meat chopper or blender. Beat eggs in mixing bowl.
- Add oil and sugar. Mix well.
- Add carrots and lemon and blend.
- Sift together dry ingredients.
- Add to liquid ingredients and lightly blend.
- P our into 2 greased loaf pans and bake at 350° for 45 to 50 minutes or until a cake tester inserted into the center comes out clean.
