Ingredients
- 2 c. flour
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. soda
- 1 1/2 tsp. salt
- 2 c. sugar
- 4 eggs
- 1 1/2 c. oil
- 2 c. grated carrots
- 1 (13 oz.) can crushed pineapple, drained
- 1/2 c. nuts
- 1 c. coconut (optional)
- 1 c. raisins (optional)
Method
- Sift flour, baking powder, cinnamon, soda and salt.
- Mix together sugar, eggs and oil.
- Add sifted ingredients, carrots, drained pineapple, nuts, coconut and raisins.
- Pour into a greased and floured pan.
- Bake at 350° for 40 to 50 minutes.
