Ingredients

  • CAKE
  • 2 cups flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 2 cups sugar
  • 1 1/4 c canola oil
  • 4 large eggs
  • 3 cups grated peeled carrot
  • 1 1/4 c coarsely chopped walnuts
  • 2 Tbs minced peeled ginger
  • ICING
  • 10 oz cream cheese at room t
  • 5 Tbs unsalted butter at room t
  • 2 1/2 c powdered sugar
  • 1/4 c maple syrup

Method

  • CAKE
  • 350F. Butter 9x13" dish. Whisk flour, baking soda, salt and cinnamon to blend.Whisk sugar and oil in large bowl. Whisk in eggs 1 at a time. Add flour mixture and stir. Stir in carrots, walnuts and ginger. Bake cake until ready. Cool.
  • ICING
  • With electric mixer, beat cream cheese and butter. Add powdered sugar and beat well. Beat in maple syrup. Spread over the cake.
