Ingredients

  • 1 3/4 c. flour
  • 1 c. brown sugar
  • 1/2 c. honey wheat germ
  • 1 1/2 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 3/4 tsp. salt
  • 1 egg
  • 2/3 c. buttermilk or milk
  • 1/2 c. oil
  • 1 1/2 tsp. vanilla
  • 1 1/2 c. grated zucchini
  • 1/2 c. grated carrots
  • 1 c. nuts
  • 1/2 c. raisins

Method

  • In large bowl, mix flour, sugar, wheat germ, soda, cinnamon and salt.
  • Beat egg; add vanilla, raisins and nuts to flour mixture and veggies with the milk.
  • Mix until flour is moistened. Spoon into muffin pans.
  • Bake about 25 minutes in a 350° oven. Makes about 18 muffins.
